Recipes

Cooking does not have to be complex or mean spending hours in the kitchen. Nor does healthy eating mean living on lettuce, chicken and egg whites! Enjoy a sampling of Via's Easy and Original Healthy Recipes. She uses organic ingredients in almost all that she prepares, even down to the spices. The following selections are perfect for light Spring fare!

HUMMUS-EGG DELIGHT

 

Ingredients:

3 Large Brown Organic Hard Boiled Eggs  1/3 of a cup Kalamata Olive Hummus
1/2 cup Organic Black Beans
2 chopped stalks Organic Celery
Dash of Salt, fresh cracked Black Pepper & Red Cayenne Pepper



Directions:

Boil eggs in water over medium heat for 6 minutes
Let cool, then shell

Cut eggs into cubes

In a medium sized glass mixing bowl, combine celery, beans, and eggs
Blend in Hummus
Add salt, pepper and cayenne then mix

Cover bowl with plastic wrap and place in refrigerator
Let flavors sit for 4-12 hours to blend

East as a sandwich with toast, place over salad or just eat as is!

 

Serves 2

BERRY-LICIOUS ENERGY BOOSTING SMOOTHIE

 

Ingredients:

1/2 cup of strawberries

1/2 cup blueberries

1 frozen banana

1 cup vanilla coconut milk

1 scoop vanilla vegan protein powder

1 scoop detox digest (Amzing Grass)

1 tbl sp chia seeds

1 tbl sp flax seeds

1/2 cup kale

1 tb sp chlorella powder

1 tsp camu berry powder

 

Directions:

Put all ingredients in a high speed blender and blend until smooth 15-20 seconds.

 

Serves 2

 

CHILI VEGGIE BURGER


Ingredients:

2 cups of veggie leftovers from juicer (kale, carrot, celery, cucumber, ginger beat) If not from a juicer – chop or puree vegetables in a food processor and strain out liquid

1 cup brown rice
2 eggs
1/2 tbl spoon chili
1/2 tbl spoon cumin
1 teaspoon garlic
1 teaspoon salt

Directions:
RICE
Boil 2 cup of water with a dash of salt
Add in 1 cup of brown rice
Bring to a boil, cover and simmer for 40 minutes until rice soaks up all water


Mix together vegetables, rice, spices & eggs
Spray skillet with non stick olive oil
Form veggie mix into patties
Place into skillet and cook 5 minutes on medium heat

Flip over and cook on the other side on medium heat

 

Serves 4-6 burgers

ASIAN SLAW BOWL

 

Ingredients

1 cub of cabbage slaw
1 cup of Brussel sprout slaw
2 cups cooked brown rice
4 carrots - diced
8 oz frozen peas – thawed out
1 16 oz. package of firm tofu
1 16 0z jar peanut sauce
1 tsp salt
1 tsp pepper


Directions

Cook rice according to package directions
Dice carrots
Thaw out peas
Blend all ingredients together
Refrigerate for 1 hour and serve chilled!

 

Serves 4

 

GREEN ENERGY-DETOX JUICE

 

Ingredients:

1 apple

4 celery stalks

bunch of cilantro

bunch of kale

1 beet

1 cucumber

1 lemon

1/4 in ginger

 

Directions:

Clean all vegetables

Trim edges

Juice all in a juicer to extracr juice from pulp

Drink & enjoy!
