Gluten Free Pasta Fagiole
Winter has decided to make a comeback!
While we are all patiently waiting for this ice & snow to melt here in the
North East, I felt it be appropriate for me to share one of my custom
Gluten Free soup recipes!
Making Italian food was the first cuisine I was ever introduced to in my mothers Sicilian Kitchen. For as long as I can remember, I was always helping her with nightly dinners for my family of 6 as I was the youngest child and only girl. Our cooking together is one of the fondest memories I have of my childhood, that also carried into adulthood, which unexpectedly led me to my passion for developing recipes of great tasting food that I never imagined would have developed into a career. Whenever it was a cold, snowy winters day in NY, my mother would always whip up a fresh batch of soup, and do some baking. By some I mean lots and lots of baking. As I got older, I started to re-vamp my mothers’ traditional recipes by keeping in the great taste, but tweak them along the way to make it more nutritionally sound. This Pasta Fagiole Recipe is no different. It has her great, fresh Italian flavor with my twist of making it gluten free to meet today's healthier standards.

Prep time: 10 minutes
Cook time: 30 minutes
Serves 6

TOOLS NEEDED
Knife
Cutting board
Large pot
Wooden or plastic spoon
Garlic press
Large bowl for serving
Spoons for mixing and serving
INGREDIENTS
2 tlb spoon olive oil
3 garlic cloves
1 medium yellow onion, diced
2 stalks celery
6 cups water
1 can diced tomatoes 16 oz
2 tbl chicken boullion
1 tablespoon garlic powder
1 tsp each: basil, oregano
1 tsp sea salt
1/2 box gluten free pasta
1 can kidney or navy beans
DIRECTIONS
Heat pot over medium heat
Add olive oil
Dice all garlic, celery & onion and add to pot
Cook for 3 min on medium heat then add water, diced tomatoes, boullion, garlic & sea salt
Stir all together with a spoon
Bring water to a boil
Add in pasta
Cook for 8 minutes
Add in beans
Let cook another 10-15 minute
Let cool & serve
You may want to add additional sea salt or garlic for preferred taste
