Pumpkin Energy Ballz
As we lead into the holiday season, many of us tend to fall off the wagon when it comes to eating healthy. Your ability to say no to an over abundance of sweets and treats is a thing of the past.
As your no’s decrease, your waste line tends to increase.
Being an advocate of clean eating and nutrition, I feel it is my civil duty to help you stay on track, and fuel you with tips, tools and techniques on how to survive the holidays in optimal health. It doesn’t mean you’ll be starving yourself by any means (I don't support that!), or not being able to enjoy some guilty holiday pleasures, but I will do my best to educate you to have the tools to say no, versus a big fat yes to all!

And, with keeping healthy flavors of Fall in mind (although it feels like winter here today in NY)
one of my easy, go to recipes for breakfast, dessert or an anytime snack are my original creation of Pumpkin Energy Ballz.
These little bites of deliciousness are:
Loaded with fiber, B vitamins, zinc, magnesium, vitamin A and vitamin C.
They are also made with honey and coconut oil, two important ingredients to help keep energy high, burn fat as well as fight off colds during these transitional weather times where everyone around us begins to get sick.
These no bake treats are super allergy friendly being both gluten, dairy, nut and soy free.
Because they're also raw, they aid in optimal digestion, assimilation and energy output!
Want to make them vegan?! Simply swap out honey for maple syrup!
Recipe: Chef Via Melissa's Pumpkin Energy Ballz

Ingredients:
Ingredients
3 tbl sp honey
1/4 cup coconut oil
1 cup pumpkin purée
1 1/2 cup GF oats
1 1/2 serving Amazing Grass vanilla protein powder
1 tsp each:
cinnamon, ginger & nutmeg
OR
2 sprays each: Simply Beyond cinnamon & pumpkin pie spice
Directions:
Place oats, protein & spices in a bowl
Mix together
Add pumpkin, honey & coconut oil in a blender or food processor and mix for 15-20 seconds
Add wet ingredients into the bowl of dry ingredients
and blend all together by hand
Roll balls in palm of hand
Make 12-16 balls with dough
Place in refrigerator for 30 min
Eat and enjoy!
